Cream Of Spinach soup: raw and keto

Perfect dish for hot summer days: raw, green soup. This cold, refreshing soup is made from spinach and avocado, topped with wakame and dulse seaweed and hempseeds. 🥬
Recipe is based on “Raw Foods Made Easy” by Jennifer Cornbleet, a fantastic cookbook, which requires no cooking at all. Her raw food recipes are simple, delicious and easy to recreate, all you need is a high-speed blender and food processor. I know this book for 10 years and always loved it, all savory recipes are great for keto as well. 🥬
I have shown this book to my oncologist, because he asked me about good vegetarian cook book and he and his family loved it, too. 🥬😊

80g spinach
300g cucumber
½ ripe avocado
250ml water + few ice cubes
1 clove garlic
1 tablespoon lemon juice
0,5 teaspoon Himalayan salt
1,5 tablespoons extra-virgin olive oil
Fresh herbs: parsley and dill
Cayenne pepper

Place veggies, salt, water, garlic and lemon juice in a blender and blend till smooth. Add avocado and olive oil, blend till smooth, then add the herbs and blend. I like to add few ice cubes, otherwise the soup gets slightly warm in my @omniblendsa. 🥬✨
