Roasted Zucchini Humus (keto)

Zucchini is in season now and there are 10000 ways to prepare it. It’s a perfect keto diet vegetable in my opinion, low in carbs and easy to digest and can be made into various meals. This super easy ketogenic zucchini humus is great and tastes almost like the real thing. Enjoy it with flax crackers, it is excellent as spread on keto bread, too.

Ingredients for 2 servings, all organic:

One big zucchini, around 200g
Extra virgin olive oil 15g + additional EVOO for drizzling
Shallot 20g
Tahini 60g
Garlic 1 clove
Apple cider vinegar 1 TBSP
50-100 ml water, to thin out
0,5 TS Cumin
Cayenne pepper
Salt, pepper

Macros / 1 serving: kcal 295, protein 8g, net carbs 5,7g, fat 25,5g

Cut zucchini and shallot in rings, place on an oven tray lined with paper. Grill at 180 C till soft and well cooked. Take out, place grilled veggies in a bowl and using an immersion blender puree very fine. Add crushed garlic, tahini and spices, mix well. Eventually add some water to thin out, when it gets very thick. Consistency should be humus-like.

To be honest I like to eat this while still warm, but its excellent cooled, it stays fresh for 2-3 days in a fridge.
